A few years ago, Asian fusion cuisine was the exciting new taste for fine diners, where innovative chefs were combining Chinese, Japanese and even Indian flavors with French techniques. Now Latin is the new Asian.

In the Northeast, it seems that New York has led the crossover to the bold flavors of South and Central America, Cuba, and the Caribbean with restaurants like Asia de Cuba and Sushi Samba. Philadelphia too has many haute examples of this inventive new cuisine: Cibucan and Alma de Cuba are two greats.

Boston has been slower to come around, but ceviche is finally starting to pop up on menus at the newest eateries like Great Bay (they have a whole ceviche bar!). And Bonfire's Taqueria Menu captures a similar spirit with their Spicy Tuna Tartare Taco with ginger carrots, avocado crema, pico de gallo & cilantro. Delicious!     I love the decors of Cibucan (above) & Alma de Cuba (below) - modern, minimalist, evocative. I could make whole collections based on these rooms.
